Raise your hand if you’re excited for summer recipes🙌
My last recipe dump was a little out of control… It easily could have been a 3-part series. Excitement got the best of me, and I could not hold back.
This time around, I’m focusing on my favorite recipes I make on repeat during the summer season.
With warm weather, backyard pool parties, and longer days rapidly approaching, I’m sharing some newly discovered recipes, and I took a trip down memory lane to unearthed some oldies but goodies.
Citrus Arugula Salad
I made this recipe on a whim this past Sunday when looking for a salad option to pair with the rest of the meal. WOWZA, it was a winner! I’m a sucker for homemade dressing, and this one was too easy. The ingredients are pantry staples plus a touch of orange juice. I even forgot to include the quinoa, and it was still delicious. 12/10 and will for sure have this as our go-to summer salad.
Stuffed Peppers
So easy + so filling. This was one of the recipes we made a few times last summer when I first started eating animal protein. I’m sure there are a million and one ways to make ground beef, but a person can only eat so many meatballs, ya know?
This recipe is quick, easy, and versatile. Pretty sure I choose to roast the peppers instead of blanching them before stuffing. If you have leftover filling, they are excellent as tacos or a burrito bowl the next day!
Classic Hamburgers (with a baked option!)
It’s a little embarrassing how often we ate hamburgers last summer. Honestly, it was close to 3 times a week. If you’re intimidated by making a “good” hamburger patty, my advice is… Keep. it. simple. You really don’t need much. Usually I toss in:
an egg
maybe milk or cream
some Parmesan cheese - if I have it
Worcestershire sauce - usually have it but hardly remember to add it
a combination of seasonings - garlic, onion, paprika, celery salt, cayenne, salt, pepper…
Mix it all together, form the patties and toss ‘em on the grill!
OR if you don’t have a grill, here is an option to bake the patties (our go-to method during the cold months in Alaska).
Carrot and Cabbage Tahini Slaw
This recipe includes instructions for Lentil Burgers (delicious if you’re looking for a meatless option). What I return to this recipe for is actually the carrot and cabbage tahini slaw. I’ll preface this by saying I am not a coleslaw person. But this tahini-take has a tight grip on me. While it’s meant to be a topping for burgers, I’ve made it as a side dish too many times to count.
Cherry Pie Filling
Quinn’s favorite pie is a cherry pie, so naturally I’ve tried many cherry pie recipes to find the best one. And I think I did it with this one. I’m not saying cherry pie is my favorite, but I’m not saying it’s not my favorite. Let’s just say, I don’t discriminate when it comes to pie. Peach, apple, berry, cherry, lemon, rhubarb… Don’t make me choose my favorite! I can’t!
I’ve only used frozen cherries for this recipe because who has the patience or time to pit fresh cherries?!
Crispy Potato Tacos
I don’t know if I’m ready to admit this… (deep breath) Okay, back in my college days, there were nights when I would frequent the nearby Taco Bell for the Potato Tacos 🙈 I know, trust me, the quality of food I previously fed my body still haunts me to this day.
Which is why I had to try this recipe when I stumbled upon it a few years ago as a replacement for the Taco Bell version! Of course, these ones ended up being even better than the fast food version.
